Slow cooker fajitas with avocado + $10 PayPal Giveaway
/Have I ever told you that I have an ongoing love affair with Mexican food? Oh my gosh. All of it. Tacos. Burritos. Chips. Salsa.
I think it happened the first time I ever dipped a chip in liquid cheese. But I am busy. Plus I have very loud and very small children and going to the local Mexican joint just ain't happening. So I do what I can at home.
And since this is slow cooker Friday I thought I would share a pulled pork slow cooker fajita. This is perfect for Saturday game day or a busy work day. Just throw everything in the crock pot and go about your day.
And I paired mine with a little corn, black beans and of course my favorite, avocados from Publix. It was perfection.
What you'll need:
2 pounds of pork shoulder or 2 large boneless skinless chicken breasts
2-3 smaller bell peppers
1 small onion
1 packet Old El Paso fajita seasoning
1 jar salsa
Line your slow cooker with onion and place your roast (or chicken if you're subbing) on top of the onions. Then scatter the bell pepper around the roast. Sprinkle everything with fajita seasoning and cover with salsa.
Let cook on low for eight hours. This is perfect for a work day. If you're going to sub the pork roast for chicken only cook for four hours on low.
When it's finished cooking you can shred the meat using two forks and then serve it up!
Cooking your favorite fare at home is so much more economical than taking your whole family to a restaurant. And this roast just tastes and smells so amazing.
