Creamy Chicken Parmesan with White Sauce
/Just look at that picture. Just look at it. Doesn't that look good?
I made this last week and my husband raved about how good it was. It made me suspicious? Is all my other food gross?
Anyway, this chicken parmesan was inspired by two things, one a Helman's commercial. And two, my sister. She was telling me about this chicken she made using mayonnaise and mustard and crackers. Mayonnaise? I really don't like mayonnaise.
But why not give it a try? We are really out of ideas over here.
Oh. My. Goodness. It was so good. And it took like no time to make. I paired it with a pasta and white sauce (that also used mayonnaise).
Okay, let's get started.
What you'll need:
Chicken:
Four small chicken breasts or a few cutlets.
1/4 cup mayonnaise
2 tbsp water
2 tbsp Italian seasoning
1 tbsp garlic powder
1 tbsp dried onion
1/2 cup Italian Bread Crumbs
1/4 parmesean or mozzerlla cheese
2 cups cooked rotini (or pasta of choice)
Sauce:
2 tbsp mayonnaise
1/2 cup mozzarella cheese or Italian Cheese Blend
2 tbsp milk
kosher salt
Preheat your oven to 350.
In a bowl combine your mayonnaise, Italian Seasoning, garlic and onion.
Mix in a little water and whisk.
Run your chicken through the mixture.
Then place in bread crumbs and fully coat. Sprinkle with cheese and bake 30 minutes.
In a sauce pan combine your pasta, mayonnaise, cheese and milk. Stir. Stir. Stir. Serve chicken over pasta.
