Pumpkin Spice Streusel Filled Muffins

It's starting to get cooler in South Alabama. Fingers crossed it sticks! 

I made these muffins a few years ago and decided to pull out and dust off this post and reshare it.

They were a big hit. They actually came about by freak accident. I had intended to make a streusel topping, but I made it too dense and it sunk into the muffin. BEST. ACCIDENT. EVER. 


What you'll need:

A pumpkin cake mix or a spice or yellow cake mix with the oil subbed for pureed pumpkin (trust me this works)

1/2 stick butter melted

4 tbsp brown sugar

2 tbsp flour

Just mix it up according to the package instrustions. I personally love the Trader Joe's Pumpkin Bread, so that's what I used. Filled your muffin tins. 

Mix your butter, flour and brown sugar. 

Now drop the mix into each muffin. 

Then slide into the oven. I baked mine for 20 minutes at 350.
