Blueberry Apple Breakfast Quinoa

So you're tired of cold cereal and you don't like oatmeal but you're looking for a healthy and delicious breakfast option. 

Have you tried quinoa? We love quinoa at our house. It's filling and delicious and very healthy. Plus a little goes a looooong way and you know this frugal mama likes that.

But have you tried it for breakfast? It's delicious. I whipped this up last week with a toddler on my hip and it was yuuuum yum. This yields two servings. 

What you'll need:

1/2 cup quinoa, rinsed

1 cup milk (I recommend 2 percent but you can use whole, skim, almond, etc. etc.)

2 tbsp honey

1 tbsp cinnamon or less if you like it less "spicy" 

1 cup fresh or frozen blueberries

1 cup chopped apples

Bring your milk to a boil and add your quinoa. Let it simmer for 10-15 minutes. You will still have a little milk in the sauce pan, that's fine. If it looks dry add a little more milk. 

Next, add your cinnamin and honey and stir. Then toss in your fruit and serve it up!
