Easy Instant Pot oatmeal

So funny story. My oven died. It died while I was in the middle of cooking for our Classical Conversations community potluck. My husband figured out how to keep it running long enough to finish cooking my casserole. A few days later a friend who works on appliances came to look at it.

It turns out the outlet had melted and the oven was shutting off to avoid a fire. Whew!

So we were ovenless until my husband was able to fix it. But I still needed to feed my crew. So one morning I figured out how to make oatmeal in the instant pot and it was amazing.

It is so unbelievably simple.

What you’ll need:

1 cup oatmeal (I used old fashioned)

2.5 cups water

2 tbsp butter

I also used 1/2 cup raisins

some cinnamon (I didn’t measure)

1/4 cup brown sugar (you could use any sweetener, honey or maple syrup)

I dumped everything in the Instant Pot EXCEPT THE SUGAR wait until the end. Set it to manual for FOUR minutes. Once it was done cooking I pushed the valve to manual release. Then stir in sweetener.

Presto! It was so good.

I made our cinnamon and raisin, but there are so many combinations you could make.

Oatmeal ideas:

Apple: Chop some apples and toss them in

Apple and cranberries: throw in some craisins with your apples

Maple: Add some maple syrup, 1-2 tbsp per serving

Pumpkin: Add a tbsp pumpkin puree per cup and add in some pumpkin pie spice

Blueberry: fresh, frozen or dried
