Easy Baked Oatmeal
/ Lydia SennMy family loves this easy-baked oatmeal. I will often double the recipe and freeze half. The key is to freeze UNCOOKED. I also compile the ingredients and let it sit in the fridge overnight.
Bake at 375 for 45 minutes and you’re GOLDEN!
What you need:
2 large eggs
1/2 cup packed brown sugar
1/2 tablespoon baking powder
1/2 tablespoon vanilla (I don’t actually measure)
1 teaspoon cinnamon (I don’t measure that either)
1/4 teaspoon kosher salt
1/4 cup butter, melted
1 1/4 cups milk (ANY kind)
3 cups (old-fashioned rolled oats and quick oats work well.)
1 cup frozen blueberries to mix in or top
Add all your dry ingredients together. Then combine your wet ingreidents. Stir together. Pour in a greased 8 by 8 pan. (A regular casserole dish works too!) Bake at 375 for 45 minutes.
