Easy BBQ Chicken Cups + Cash Giveaway
/We have officially entered the busy season. Between now and January 1 our calendars will all be jammed packed with activities and parties. Each party I am scheduled to attend I have also been asked to bring an appetizer or finger food.
I don't know why this used to stress me out. That was until I realize I could bring of our family's favorite meals to the parties.
We love BBQ Chicken Cups. And they are so frugal and simple to make.
I don't know about you, but stopping by Publix to pick up a rotisserie chicken is pretty much the easiest thing ever. Especially on a Sunday after church.
But if you're like us you ALWAYS have chicken left over. Today I wanted to share one of our favorite family recipes and that is BBQ chicken cups. It just requires four ingredients and you can get it from prep to table in 25 minutes.
A can of Pillsbury Grands biscuits
about 1 -2 cups shredded cooked chicken
A bottle of BBQ sauce or you can make your own
1/2 cup shredded cheese, any variety
You could use any leftover meat for this recipe. It's a GREAT way to use up leftovers, which is perfect for us because I hate wastefulness.
I also used canned biscuits for this recipe because Pillsbury Grands are my husband's favorite (did I mention I have ZERO bread baking ability?). Also, on busy nights taking this short cute allows me more time with family instead of fussing around in the kitchen.
Preheat your oven to 375 and grease your muffin pan.
Combine your chicken and BBQ sauce in a bowl and stir until the chicken is coated in BBQ sauce.
Using the canned biscuits, I place one biscuit in each muffin mold. I press the dough into the pan, forming it into a little cup. Then fill the cup with chicken.
Next, sprinkle with cheese and you're ready to place them in the oven. Bake at 375 for about 15 minutes.
I pair ours with a salad or mixed vegetables and even my kids love this meal. I am now the mother to a very picky 4-year-old and he loves these little chicken cups.
As I mentioned, this is a really fast and frugal meal because it uses things I already have on hand and have probably gotten on sale. For example, this week Grands biscuits were 3 for $5 and there was a $1 off coupon.
These were a big hits with our whole family and since we are ALL about the quick meals it was so easy to put together.
