Cooker Garlic Honey Mustard Chicken thighs (with seasonal vegetables)
/I've gotten so many people asking me to reshare this recipe! So today I am doing it. It's easy and delicious and amazing!
I preach the value of meal planning and cooking and how much money and time it will save you. But I also know that a lot of you are working moms or your families are busier than busy and you have zero time to cook.
SO over the next few weeks I am going to be focusing on slow cooker meals. And not JUST slow cooker meals, budget friendly meals that you can throw in your crock pot in the morning and eat when you get home in the evening.
Today I am sharing a yummy recipe that I modified from another blog. If a recipe has too many ingredients and too many steps I am just not going to cook it.
But this recipe was super simple and I scored the chicken thighs from my local butcher for just $.70 a pound! This was enough to feed my family of four and enough for us to all have lunch the next day
What you'll need:
8 chicken thighs
2 pounds b-sized potatoes (those are the small potatoes)
4 cups green beans
4 carrots, peeled and chopped
2 tsp minced garlic
4 tbsp honey mustard
4 tbsp honey
You can use ANY seasonal vegetables, these just happened to be the ones I had on hand.
Combine your honey, garlic and mustard in a small bowl.
Place your chicken in the bottom of your slow cooker and drizzle with half the honey mustard mix.
Add your vegetables and then drizzled with the rest of your mustard mixture.
Cover and cook on low for 8 hours or high for 3-4 hours.
Note: You can use boneless skinless chicken breast, but I would add about 1/4 cup of chicken broth and only cook on low for 4 hours.
This was serisouly easy and so delicious. When it was finished cooking I pulled the meat off the bone and served.
Two tips: Cut your vegetables all the night before and put them in a big ziplock bag together.
Or, get some up them precut. It's okay to use a bag of precut green beans or baby carrots.
